Tesseract, last I checked, didn't handle .jpegs.

Still, the number of convenient open-source print-to-pdf converters out there should make this a simple process. I've had good luck with PDF Creator: http://sourceforge.net/projects/pdfcreator/

seriously, good copy-editing doesn't need to be such a high-stakes endeavor. an outside proofreader is a good idea, but for this to be feasible you really need to have finished content-editing by a reasonable hour the night before, with proofing left for the wee hours. I'll volunteer to staff the whole 24 hours and would also edit, say, lit packets for duplicates, etc. (not so much on the content, but still a vast improvement over going unedited, no?)
